Festival Codfish
Fritters

- 2 Cups Festival Mix
- 1/2 cup cooked and de-boned Codfish
- 1/4 cup diced Onion
- 2 tbsp Scallion finely chopped
- 1/4 tsp Thyme leaves
- 1 tsp chopped Hot Pepper
- I tsp Garlic powder
- 1 tsp Black Pepper
- 1/2 cup Water
- 1 Egg
- 4 cups Oil
Shred
codfish and combine with onion, scallion, thyme leaves, black pepper, garlic
powder and hot pepper. Blend well with Festival mix. Beat egg and water
then add to dry mixture to make a firm paste.
Cover
mixture and allow to stand for 40 minutes. Pre-heat oil. Spoon the
required size dough into the hot oil. Fry until golden brown and cooked.
Cool on absorbent paper. Makes approximately 4 dozen fritters.

The Festival Story:
"Festival" was created by a fisherman from Breaton,
St. Catherine, Jamaica. His delicious Jamaican style
fried pastry was inspired by a combination of Indian "
Roti" and Jamaican " Johnny Cake". He tested his
creation at the Hellshire Beach, a popular haunt for
most Kingston area dwellers. It is said that this
fisherman named his discovery "Festival" because
"Festival nice, just like Festival". He was right,
Festival, served Hellshire style with fried fish has
become a delicious and legendary combination. We
captured the essence of this unique recipe. Enjoy
Festival, Hellshire style with fried fish, or with
chicken and other meat dishes, or simply by itself.
